Bacon Shallot Rice Pilaf Recipe

Ingredients
  • 1/4 c orzo pasta .
  • 1/2 c long-grain rice .
  • 1/2 c low sodium chicken broth .
  • 1/2 c water .
  • 1/4 c sliced shallots .
  • 2 pieces thick-sliced bacon, cut into 1/2 inch pieces .
  • 1/8 tsp salt

Directions
  • Step #1 Cook bacon in medium saucepan over medium-high heat until browned, turning frequently; transfer bacon with slotted spoon to paper towels to drain & set aside.
  • Step #2 Add orzo to saucepan, & cook & stir 3 to 4 mins.
  • Step #3 Add shallots, & cook & stir until shallots are tender & orzo is golden, 3 to 4 mins longer.
  • Step #4 Add rice, stirring to coat with fat.
  • Step #5 Add broth, water & salt.
  • Step #6 Bring to boil, reduce to simmer, cover, & cook this until liquid is absorbed, 15 to 18 mins.
  • Step #7 Remove from heat.
  • Step #8 Let stand 5 mins.
  • Step #9 Sprinkle top reserved bacon on top.
  • Step #10 Serve hot.
