Christmas Brunch Casserole Recipe

Ingredients
  • 1 c shredded Cheddar cheese
  • 1 tbsp butter
  • 4 eggs
  • 1 lb bacon
  • 1 pinch dried parsley
  • 4 c frozen hash brown potatoes, thawed
  • 1/2 tsp ground black pepper
  • 2 onions, sliced
  • 2 c fresh sliced mushrooms
  • 1/4 tsp garlic salt
  • 1 tsp salt
  • 1 1/2 c milk

Directions
  • Step #1 Preheat oven to 400F degrees F (200 degrees C).
  • Step #2 Grease a 9x13 inch casserole dish.
  • Step #3 Place bacon in a large, deep skillet.
  • Step #4 Cook over medium high heat until evenly brown.
  • Step #5 Drain & set aside.
  • Step #6 In a separate skillet, melt the butter & fry onions & mushrooms until tender.
  • Step #7 Place potatoes in bottom of prepared dish.
  • Step #8 Sprinkle top with salt, garlic salt, & pepper.
  • Step #9 Top with bacon, then onions & mushrooms.
  • Step #10 In a large bowl, beat eggs with milk & parsley.
  • Step #11 Pour over casserole.
  • Step #12 Top with grated cheese.
  • Step #13 Cover & put in the fridge overnight.
  • Step #14 Bake in preheated oven for 1 hr or until set.
  • Step #15 If preparing & baking the same day, cook for 45 mins.
