Healthier Spinach Balls Recipe

Ingredients
  • 2 (10 oz) packages frozen spinach, sliced, thawed & squeezed dry .
  • 1/4 c parmesan cheese, grated .
  • 1/8 tsp salt .
  • 1/4 c butter, melted .
  • 3 tbsps chicken broth .
  • 1 garlic clove, minced .
  • 1 1/2 tsps dried thyme .
  • 1/4 tsp pepper .
  • 1 egg, lightly beaten .
  • 1 c onions, sliced fine .
  • 2 c seasoned stuffing mix, crushed .
  • 3/4 c egg substitute

Directions
  • Step #1 In a large bowl, thyme, garlic, butter, broth, mix stuffing, onion, egg, egg substitute, Parmesan, salt & pepper.
  • Step #2 Stir in spinach until well mixd.
  • Step #3 Roll into 1-inch balls.
  • Step #4 Place in a 15x10x1-inch baking dish coated with nonstick spray.
  • Step #5 Bake uncovered at 350 degrees until golden brown, about 15-20 mins.
