Pumpkin Praline Cheesecake Recipe

Ingredients
  • 1/2 c egg whites .
  • 2 1/2 c gingersnap cookies (crumbled) .
  • 1/2 c brown sugar (packed) .
  • 2 tsps ground cinnamon (ground) .
  • 1 c pecans (sliced) .
  • 2 tsps ground cinnamon (ground) .
  • 1/4 tsp ground cloves (ground) .
  • Filling .
  • 1 c sugar .
  • 1/4 c unsalted butter (melted) .
  • Pralines .
  • 32 oz light cream cheese (softened) .
  • 3 tbsps whole wheat flour .
  • 1/3 tsp ground allspice (ground) .
  • 1 tsp ground ginger (ground) .
  • Crust .
  • 15 oz canned pumpkin, canned .
  • 1/4 tsp nutmeg .
  • 2 1/2 tsps vanilla .
  • 3 tbsps unsalted butter

Directions
  • Step #1 Begin with pralines: Preheat oven to 325°F Line baking sheet with non-stick foil wrap.
  • Step #2 Stir sugar & butter in saucepan over med-heat/flame until mixture comes to boil; boil 1 min without stirring.
  • Step #3 Mix in pecans & spread mixture on foil wrap lined baking sheet.
  • Step #4 Bake 8 mins until syrup bubbles as if boiling.
  • Step #5 Remove from oven & let cool.
  • Step #6 Break into pieces.
  • Step #7 Make Crust: Stir cookie crumbs & cinnamon in bowl till mixed.
  • Step #8 Add butter & stir until crumbs are moistened.
  • Step #9 Press onto bottom & 1" along sides of 9" springform pan (w/ 2 3/4" high sides).
  • Step #10 Bake crust 10 mins until set & let cool.
  • Step #11 Double-wrap outside of pan with heavy-duty foil wrap.
  • Step #12 Place in large roasting pan.
  • Step #13 Make filling: Raise oven heat to 350°F.
  • Step #14 With electric mixer, beat cream cheese & sugar until smooth.
  • Step #15 Beat in flour, spices & eggs (1 at a time).
  • Step #16 Beat in pumpkin & vanilla then pour this into crust.
  • Step #17 Pour hot water into roasting pan to reach 1/2" up sides of springform pan.
  • Step #18 Bake cake 1 hr 45 mins in water bath until center is just set, adding more water as needed.
  • Step #19 Remove cheesecake from water.
  • Step #20 Cool in pan on rack.
  • Step #21 Remove foil wrap & run knife between cake & pan sides.
  • Step #22 Chill until cold; then cover & chill overnight.
  • Step #23 Release pan sides.
  • Step #24 Place cake on platter.
  • Step #25 Sprinkle top praline over cake & serve.
