Cinnamon Chocolate Angel Pie Recipe

Ingredients
  • 1/4 tsp ground cinnamon
  • 2 egg whites
  • Filling:
  • 1 (9 inch) pastry shell, baked
  • 1/2 c sugar
  • 1/2 tsp white vinegar
  • 1 c semisweet chocolate chips
  • 1/8 tsp ground cinnamon
  • 1 c whipping cream
  • 1/4 c sugar
  • 2 egg yolks
  • 1/4 c water

Directions
  • Step #1 In a mixing bowl, beat egg whites & vinegar on medium speed until foamy.
  • Step #2 Combine sugar & cinnamon; slowly beat into egg whites, 1 tbsp at a time, on high until stiff peaks form.
  • Step #3 Spread into the pastry shell.
  • Step #4 Bake at 325F degrees F for 20-25 mins or until meringue is lightly browned.
  • Step #5 Cool.
  • Step #6 For filling, whisk egg yolks & water in a saucepan.
  • Step #7 Add chocolate chips; cook & stir over low heat/flame until a thermometer reads 160 degrees F & mixture is thickened (do not boil).
  • Step #8 Cool.
  • Step #9 Spread 3 tbsps over meringue; set remainder aside.
  • Step #10 In a mixing bowl, beat the cream, sugar & cinnamon until stiff peaks form.
  • Step #11 Spread half over the chocolate layer.
  • Step #12 Fold reserved chocolate mixture into remaining whipped cream; spread over top.
  • Step #13 Chill for 6 hrs or overnight.
  • Step #14 Refrigerate any left overs.
