Chicken Castellina Recipe

Ingredients
  • 1/4 tsp salt .
  • Chicken Ingredients .
  • 8 1/2 oz sliced artichokes, drained .
  • 3 oz butter, cubed .
  • 12 oz heavy cream .
  • 6 oz flour .
  • fresh parsley, sliced .
  • 12 oz milk .
  • 1 tsp garlic, sliced .
  • 3 oz mushrooms, sliced .
  • 2 oz white wine .
  • 3 oz smoked gouda cheese, sliced .
  • 1/4 tsp pepper .
  • 2 oz pancetta, sliced (or bacon) .
  • 2 oz sun-dried tomatoes, sliced .
  • 1 oz cornstarch .
  • 1/4 tsp pepper .
  • 1 1/2 oz olive oil .
  • 2 oz grated parmesan cheese .
  • 1 1/2 lbs cooked pasta .
  • 1/2 tsp salt .
  • 1 1/2 lbs boneless skinless chicken breasts, cut in 1 to 1-1/2-inch pieces .
  • Sauce Ingredients .
  • 1 tbsp fresh rosemary, sliced

Directions
  • Step #1 Sauce Preparation:.
  • Step #2 - In a 3-qt sauce pan or large pot, sauté pancetta (or bacon) over medium/high heat until crisp & golden (not dark).
  • Step #3 - Lower heat, add butter & melt.
  • Step #4 - Add garlic & sun-dried tomatoes.
  • Step #5 - Sauté for approximately one min stirring frequently (do not brown).
  • Step #6 - Whisk in cream, milk & cornstarch.
  • Step #7 Raise heat to medium/high.
  • Step #8 - Whisk in Parmesan & Gouda.
  • Step #9 - Once cheese melts, add in the remaining ingredients & bring to a boil stirring continuously.
  • Step #10 - Remove from heat & let this stand uncovered.
  • Step #11 Chicken Preparation:.
  • Step #12 - Mix flour with salt & pepper.
  • Step #13 - Coat chicken in seasoned flour, shake off excess flour.
  • Step #14 - Heat olive oil in large sauté pan.
  • Step #15 - Add chicken in a single layer & cook this until golden brown on both sides (it should take approximately seven mins).
  • Step #16 Using a meat thermometer, make sure the internal temperature of the thickest piece of chicken reaches 165 degrees.
  • Step #17 - Begin pasta in a separate pot according to package directions.
  • Step #18 - Add wine to chicken in pan (caution: there will be a low flame in pan).
  • Step #19 Toss carefully until wine is evaporated.
  • Step #20 - Once reduced, add sauce & bring to a boil on medium/high heat.
  • Step #21 - Place 6 oz of cooked pasta on each plate.
  • Step #22 - Evenly distribute chicken & sauce over pasta.
  • Step #23 - Garnish with sliced parsley.
