Cinnamon Streusel Cake With Irish Cream Glaze Recipe

Ingredients
  • 1 c flour .
  • 1 c firmly packed light brown sugar .
  • 1/2 c cold butter .
  • 2-3 tsps milk .
  • 2 c flour .
  • 4 eggs .
  • 1 tbsp irish cream .
  • Streusel Topping .
  • 1/4 tsp baking soda .
  • Cake .
  • 1 tbsp vanilla extract .
  • 2/3 c sour cream .
  • 1 tbsp ground cinnamon .
  • 2/3 c butter, softened .
  • 1 c sliced pecans .
  • 1 c confectioners' sugar .
  • Glaze .
  • 2 c sugar

Directions
  • Step #1 Preheat oven to 325°.
  • Step #2 Streusel topping: mix flour, brown sugar & cinnamon in a medium bowl.
  • Step #3 Cut in cold butter with pastry mixer until mixture resembles coarse crumbs.
  • Step #4 Stir in pecans & set aside.
  • Step #5 Cake: Beat butter, sugar & sour cream In a large-ish bowl with electric mixer on medium speed until light & fluffy.
  • Step #6 Add eggs, one at a time, beating well after each addition.
  • Step #7 Mix in vanilla.
  • Step #8 Gradually beat in the flour & baking soda on lowish speed until well mixed.
  • Step #9 Sprinkle top 1/2 of the streusel topping mixture evenly over bottom of a greased & floured 12-c bundt pan.
  • Step #10 Spoon 1/2 of the cake batter over the streusel topping in the pan.
  • Step #11 Repeat layers.
  • Step #12 Bake 1 hr or until toothpick inserted in center comes out clean.
  • Step #13 Cool in pan 10 mins.
  • Step #14 Remove from pan & cool completely on a wire rack.
  • Step #15 Glaze: Mix all ingredients in a small bowl until smooth.
  • Step #16 Spoon evenly over cooled cake.
  • Step #17 Let stand until glaze is set.
