Onion And Pepper Confit Recipe

Ingredients
  • 4 medium onions, very thinly sliced .
  • kosher salt .
  • fresh ground white pepper .
  • 6 medium red bell peppers, peeled, seeded, corded, & very thinly sliced .
  • 1 1/2 c olive oil .
  • 5 garlic cloves, thinly sliced

Directions
  • Step #1 Warm the olive oil In a large-ish sauté pan over high heat.
  • Step #2 Add the onions, bell peppers, & garlic.
  • Step #3 Sauté until they are soft & golden, about 10 mins.
  • Step #4 Cover up & reduce the heat to medium.
  • Step #5 Cook, stirring every once in awhile, until very soft, about 45 mins.
  • Step #6 Drain & season this with salt & pepper to taste.
