Ingredients
2 (15 oz) cans black beans, rinsed & drained .
1/4 c light sour cream .
1/2 c sliced green sweet peppers .
2 (15 oz) cans low-sodium tomato sauce or tomato sauce, with seasonings .
1/4 c snipped fresh cilantro .
1 (8 oz) package reduced-fat cream cheese (Neufchatel) .
2 garlic cloves, minced .
nonstick cooking spray .
1 (12 oz) container low-fat ricotta cheese .
tomatoes, slices (optional) .
1/2 c sliced onions .
9 lasagna noodles (8 oz) .
fresh cilantro leaves (optional)
Directions
Step #1 1.
Step #2 Cook noodles according to package directions; drain.
Step #3 Mash one can of the beans; set aside.
Step #4 2.
Step #5 Lightly coat a large skillet with cooking spray; add onion, green sweet pepper, & garlic.
Step #6 Cook & stir over med-heat/flame until tender but not brown.
Step #7 Add mashed beans, unmashed beans, tomato sauce, & snipped cilantro; heat through.
Step #8 3.
Step #9 In a large bowl mix cottage cheese, cream cheese, & sour cream; set aside.
Step #10 Spray a 3-quart rectangular baking dish with nonstick coating.
Step #11 Arrange three of the noodles in the dish.
Step #12 Top with one-third of the bean mixture.
Step #13 Spread with one-third of the cheese mixture.
Step #14 Repeat layers twice, ending with bean mixture.
Step #15 Reserve the remaining cheese mixture.
Step #16 4.
Step #17 Bake, covered, in a 350 degree F oven for 40 to 45 mins or until heated through.
Step #18 Dollop with reserved cheese mixture.
Step #19 Let stand for 10 mins.
Step #20 Garnish with tomato slices & cilantro, if desired.
Step #21 Makes 8 servings.
Step #22 Make-Ahead Tip: Refrigerate unbaked casserole, up to 1 day, covered, & bake as directed.
Step #23 Or, freeze up to 1 month; thaw frozen casserole in refrigerator overnight, & bake for 40 to 45 mins or until heated through.
