Sherried Black Bean Bisque Recipe

Ingredients
  • 2 (15 oz) cans black beans .
  • 1/8 tsp cayenne .
  • 1/4 c sour cream .
  • 1/2 c dry sherry .
  • 1 (14 oz) can chicken broth or 14 oz vegetable stock .
  • 1 1/2 tsps ground cumin .
  • 2 scallions, thinly sliced .
  • 1 c half-and-half

Directions
  • Step #1 In a mixer or food processor/blender, puree the beans with their liquid & broth until smooth.
  • Step #2 Transfer to a large saucepan.
  • Step #3 Cook over med-heat/flame, stirring, for 5 mins.
  • Step #4 Add sherry, cumin & cayenne.
  • Step #5 Cover up & let simmer for 5 mins.
  • Step #6 Add half-and-half & heat through.
  • Step #7 Ladle into bowls.
  • Step #8 Swirl 1 tbsp of sour cream into each bowl & garnish with sliced scallions.
