Pinto Bean Tacos Recipe

Ingredients
  • 1/2 c cheddar cheese, grated .
  • 1 tsp chili powder .
  • 1/2 c tomato sauce .
  • 8 taco shells .
  • 1/4 tsp ground cumin .
  • 1/4 tsp oregano .
  • 1 1/2 c lettuce, shredded .
  • 1 avocado, sliced .
  • 1 (4 oz) can green chilies, drained .
  • 1 tomato, sliced .
  • 1 onion, sliced .
  • 1 (15 oz) can pinto beans, rinsed & drained

Directions
  • Step #1 Heat taco shells.
  • Step #2 In a mediun saucepan mix beans, green chili, tomato sauce & spices.
  • Step #3 Bring to a boil & reduce heat.
  • Step #4 Simmer, un-covered, 5 mins.
  • Step #5 Stirring every once in awhile.
  • Step #6 Mash beans slightly if desired.
  • Step #7 Spoon into taco shells & top this with lettuce, onion, avocado, cheese & tomatoes.
  • Step #8 Serve with salsa.
