Dilled Potato Crab Cakes Recipe

Ingredients
  • 1/8 tsp celery seeds .
  • 1 tsp dill seeds .
  • 3 tbsps corn oil .
  • 2 large red potatoes, scrubbed but not peeled .
  • salt & pepper .
  • 3 tbsps unsalted butter .
  • 2 tbsps mayonnaise .
  • 1 egg, lightly beaten .
  • sour cream (garnish) .
  • 1/2 lb crab or 2 (150 g) cans crabmeat .
  • 1 pinch cayenne .
  • 3 scallions, trimmed

Directions
  • Step #1 .
  • Step #2 Simmer potatoes in water to cover for 10 min.
  • Step #3 Drain & peel.
  • Step #4 Grate potatoes coarsely into mixing bowl.
  • Step #5 Cut scallions & add to potatoes.
  • Step #6 If using canned crab squeeze out juices.
  • Step #7 Add crab, dill, & celery seeds & cayenne.
  • Step #8 Toss together with fork.
  • Step #9 Add egg & mayo & mix well Spice up with salt & pepper.
  • Step #10 Heat half the butter & oil until sizzling.
  • Step #11 Form mixture into patties dip in flour & fry 3-5 min on each side.
  • Step #12 Heat the other half butter & oil.
  • Step #13 Fry the last half of the cakes.
  • Step #14 Serve with sour cream.
