Ingredients
1/4 tsp cayenne pepper (optional) .
1 lemon, juice & zest of, grated .
2 tbsps clarified butter (or 1 tbs each butter & olive oil) .
1/2 tsp ground cumin .
1 celery heart, sliced (two stalks) .
1 tsp salt .
2 medium carrots, sliced .
1 inch fresh ginger, minced .
1/2 tsp turmeric (optional) .
1 bay leaf .
2 garlic cloves, minced .
1 3/4 c dry split yellow peas, soaked for 2 hrs .
1 large yellow onion, sliced . 25 inch pieces .
7 c water or stock .
3 ground cloves .
1/2 tsp paprika (optional) .
1/2 c plain yogurt (optional) .
1/4 tsp ground cumin (optional) .
1 pinch salt (optional)
Directions
Step #1 Warm clarified butter or butter & olive oil in soup pot & add onion, garlic, bay leaf, ginger, & salt.
Step #2 Add in cumin & cloves & cook on medium low for 3-4 mins.
Step #3 Drain peas & add them in along with celery carrots & the water or stock.
Step #4 Bring to a boil then simmer until the peas have fallen apart, about 45 mins.
Step #5 Blend soup & add in more water or stock to achieve your desired consistency.
Step #6 Spice up to taste with salt & the lemon peel & juice.
Step #7 Serve soup on it's own or topped with the spiced yogurt.
Step #8 For spiced yogurt simply whisk yogurt until smooth & add in all the optional spices stirring until it's all mixd.
