Chocolate Mint Icebox Cake Recipe

Ingredients
  • 1 c miniature chocolate chips .
  • 1 (9 oz) package chocolate wafers .
  • 1 3/4 c chilled heavy whipping cream .
  • 1/4 c sugar .
  • 3/4 tsp mint extract

Directions
  • Step #1 To make the mint cream, beat the heavy cream, sugar & mint extract together with an electric mixer until stiff peaks form.
  • Step #2 To assemble the cake, spread each wafer with about ½ tbsp min cream, forming stacks.
  • Step #3 Lay the stacks horizontally on a long serving platter, pressing carefully to form a log.
  • Step #4 With a small spatula or knife, cover the log with the remaining mint cream.
  • Step #5 Refrigerate, covered, at least four hrs or up to two days.
  • Step #6 Sprinkle top with the chocolate chips before serving.
