Broccoli Lasagna Bianca Recipe

Ingredients
  • 1 (16 oz) container fat-free ricotta cheese .
  • 1 small tomato, sliced .
  • 1 c part-skim mozzarella cheese (shredded) .
  • 1/2 c onions, sliced .
  • 1 garlic clove, minced .
  • 2 (10 oz) packages frozen broccoli (sliced, thawed & well drained) .
  • 1 c egg substitute .
  • 2 c skim milk .
  • 1 tsp dried basil .
  • 2 tbsps parmesan cheese, grated .
  • 1/4 c all-purpose flour .
  • 9 lasagna noodles, cooked & drained .
  • 2 tbsps margarine

Directions
  • Step #1 In medium bowl, mix ricotta cheese, egg substitute & dried basil; set aside.
  • Step #2 In large saucepan, over med-heat/flame, saute onion & garlic in margarine until tender-crisp.
  • Step #3 Stir in flour; cook for 1 min.
  • Step #4 Gradually stir in the milk; cook, stirring, until mixture thickens & begins to boil.
  • Step #5 Remove from heat, stir in the broccoli & mozzarella cheese.
  • Step #6 In lightly greased 13x9x2 inch baking dish, place 3 lasagna noodles; tops with 1/3 each ricotta & broccoli mixtures.
  • Step #7 Repeat layers 2 times.
  • Step #8 Top with tomato; sprinkle with parmesan cheese.
  • Step #9 Bake at 350 degrees for 1 hr or until set.
  • Step #10 Let stand 10 mins before serving.
