Moroccan Carrot Soup Recipe

Ingredients
  • 1 tsp ground cumin .
  • 2 tbsps freshly grated gingerroot .
  • 1 tsp organic honey .
  • 1 tsp ground coriander .
  • 30 g organic butter .
  • 1 large organic potato, peeled & sliced .
  • 750 g organic carrots, scrubbed & sliced .
  • 1 tbsp orange juice .
  • 1 onion, finely sliced .
  • 4 garlic cloves, crushed .
  • 1 1/2 liters vegetable stock .
  • 1/2 tsp cayenne pepper .
  • 1 bunch fresh coriander, sliced

Directions
  • Step #1 Heat the butter in a heavy-based saucepan.
  • Step #2 Add the onions, ginger, cumin, ground coriander, garlic, cayenne pepper & fry for two mins.
  • Step #3 Add the carrots & potato & cook for ten mins, stirring every once in awhile, until the vegetables are beginning to soften.
  • Step #4 Add the stock & bring to the boil.
  • Step #5 Loosely cover, reduce the heat & let simmer carefully for 30 mins until the potato is cooked.
  • Step #6 Leave to cool slightly then stir in the the honey & orange juice, & then mix it in batches.
  • Step #7 Return to the pan to heat & serve hot with fresh coriander to garnish.
