Warm Spinach Salad With Bacon, Sweet Potatoes, And Chèvre Recipe

Ingredients
  • sea salt, to taste .
  • 1 tbsp sliced fresh parsley .
  • 3 tbsps cider vinegar, divided .
  • 1 medium sweet potato, peeled & cut into 1-inch slices .
  • fresh ground pepper, to taste .
  • 1 tbsp olive oil .
  • 2 oz chevre cheese or other soft fresh goat cheese, crumbled .
  • 5 oz baby spinach leaves, rinsed & drained (about 5 c) .
  • 6 slices bacon

Directions
  • Step #1 Preheat oven to 400°F Toss sweet potato with olive oil & 1 tbsp vinegar; add sea salt & pepper.
  • Step #2 Spread in a single layer on a rimmed baking sheet.
  • Step #3 Place bacon along edges of sheet.
  • Step #4 Bake for 12 to 15 mins or until bacon is crisp.
  • Step #5 Remove bacon, & drain on a paper towel; let cool, & break into bite-size pieces.
  • Step #6 Stir sweet potato to coat with bacon drippings, & bake 15 to 20 more mins or until tender & golden brown around edges.
  • Step #7 Place spinach In a large-ish bowl; add warm potato, scraping drippings from pan into bowl.
  • Step #8 Add remaining vinegar & parsley, & carefully toss to mix.
  • Step #9 Add bacon & chevre, & divide evenly onto plates.
  • Step #10 Serve warm.
