Carrot Flan With Thyme Crumb Topping Recipe

Ingredients
  • 4-6 c water .
  • 1 tsp sliced fresh thyme or fresh savory .
  • 2 tbsps grated parmesan cheese .
  • 1 tsp salt .
  • 2 c half-and-half .
  • 1/4 tsp pepper .
  • 5 large garlic cloves, cut into halves .
  • 1 tsp sugar .
  • 1/3 c coarse fresh breadcrumbs .
  • grated parmesan cheese, to coat the molds .
  • 2-3 tbsps butter .
  • 1 1/2 lbs carrots, cut into 1-inch pieces .
  • 4 large eggs, beaten

Directions
  • Step #1 For the flan, sprinkle six buttered 1/2-c molds lightly with cheese.
  • Step #2 Combine the water, garlic, sugar, & carrots in a saucepan & bring a boil.
  • Step #3 Reduce the heat & let simmer for 15 to 20 minsor until the carrots are tender; drain.
  • Step #4 Process the carrot mixture in a food processor/blender until smooth.
  • Step #5 Add the half-and-half & process to mix well.
  • Step #6 Add the eggs, 2 tbsps cheese, the salt & pepper & mix well.
  • Step #7 Spoon the mixture into the prepared molds & place this in a shallow roasting pan.
  • Step #8 Add enough hot water to reach 1 inch up the sides of the molds.
  • Step #9 Bake at 350 degrees for 40 mins or until set.
  • Step #10 For the topping, melt the butter in a saute pan.
  • Step #11 Add the thyme & mix well.
  • Step #12 Add the bread crumbs & toss to coat.
  • Step #13 Toast over med-heat/flame, stirring often, until crisp.
  • Step #14 Let the flane cool for 5 mins & sprinkle with crumbs.
  • Step #15 (Or unmold onto a serving platter, if you have that sort of pan.
  • Step #16 ) TO MAKE AHEAD AND REHEAT: put in the fridge, then reheat at 350 degrees for 10 to 15 mins.
