Butternut Squash Soup With Apple & Smoked Cheddar Recipe

Ingredients
  • 1 medium onion, halved & thinly sliced .
  • 1 macintosh apples, cut into 1/2 inch cubes .
  • 4 1/2 c chicken stock or low-sodium broth .
  • 1/2 c heavy cream .
  • chives or thinly sliced sage leaves, for garnish .
  • 3/4 c apple cider .
  • 2 tbsps olive oil .
  • 1/3 c coarsely shredded smoked cheddar cheese .
  • 1 3/4 lbs butternut squash (peeled, seeded & cut into 1 inch cubes - 5 1/4 c) .
  • 2 tbsps unsalted butter .
  • salt & freshly ground black pepper

Directions
  • Step #1 In a large saucepan, heat the olive oil.
  • Step #2 Add the onion & cook over moderately high heat, stirring every once in awhile, until golden, about 8 mins.
  • Step #3 Add the apple cider & cook this until syrupy, about 3 mins.
  • Step #4 Add the butternut squash & chicken stock & bring to a boil.
  • Step #5 Cover up & let simmer until the squash is very tender, about 40 mins.
  • Step #6 In a mixer, puree the soup in batches.
  • Step #7 Return the soup to the saucepan & stir in the the cream.
  • Step #8 Spice up with salt & pepper & keep warm.
  • Step #9 Heat a medium skillet.
  • Step #10 Add the butter & sliced apple & cook over high heat until the apple is tender & golden around the edges, about 2 mins.
  • Step #11 Remove the skillet from the heat.
  • Step #12 Spice up lightly with salt & pepper.
  • Step #13 Ladle the soup into bowls; garnish with the smoked cheddar, sautéed apples & chives; serve.
  • Step #14 For Vegetarian do not use Chicken broth or stock.
  • Step #15 Use Vegetable broth.
