Boiled Fruitcake (with Orange Peel And Dried Fruit) Recipe

Ingredients
  • 1 c whiskey (optional) or rum (optional) .
  • 1/2 tsp cloves, ground .
  • 1/4 c butter .
  • 1/2 tsp ginger, ground .
  • 1/2 c dried sour cherries .
  • 1 c light brown sugar .
  • 1 c orange peel, pith removed, sliced .
  • 1 tsp vanilla .
  • 1/2 c dried apricots, sliced .
  • 1 1/2 c flour .
  • 1/2 c dried cranberries .
  • 1 c raisins .
  • 1 tsp cinnamon .
  • 1/2 tsp salt .
  • 1 tsp baking soda .
  • 1 c water, hot

Directions
  • Step #1 Butter a 9x5x3 loaf pan.
  • Step #2 Preheat oven to 325F degrees Farenheit.
  • Step #3 In a large saucepan, salt, water, butter, ginger, cinnamon, boil first 12 ingredients (brown sugar, cloves, orange peel & dried fruits) for 5 mins.
  • Step #4 Remove from heat & allow this to cool to lukewarm.
  • Step #5 In a separate bowl mix together flour, salt & baking soda.
  • Step #6 Fold wet ingredients into dry & then add vanilla.
  • Step #7 Pour into prepared pan & bake 45 to 60 mins until toothpick inserted into cake comes out clean.
  • Step #8 Optional: While still hot, douse with alcohol.
  • Step #9 Wrap & store a couple of days before serving.
