Cinnamon Beef Tagine Recipe

Ingredients
  • 1 1/2 lbs top sirloin steaks or top round beef, cut in 3/4-inch cubes .
  • 1 (14 1/2 oz) can chicken broth, fat free .
  • 1 medium onion, cut into small wedges .
  • 1/2 tsp ground ginger .
  • 1 bay leaf .
  • 8 c assorted cut-up vegetables, such as butternut squash, sweet potatoes, red bell peppers .
  • 2 tsps cinnamon .
  • 2 tbsps flour .
  • 1/8 tsp cayenne .
  • 2 1/2 tsps ground cumin .
  • 1/2 c raisins .
  • 2 tbsps vegetable oil, divided

Directions
  • Step #1 Coat beef cubes with flour.
  • Step #2 Heat 1 tbsp oil in large saucepan or Dutch oven.
  • Step #3 Add half of the beef; cook 10 mins or until brown.
  • Step #4 Remove from pan.
  • Step #5 Repeat with remaining beef & oil.
  • Step #6 Return all beef to pan.
  • Step #7 Stir in broth, onion & all spices.
  • Step #8 Bring to boil.
  • Step #9 Reduce heat to low; cover & let simmer 90 mins, you may add more liquid as/if needed.
  • Step #10 Add vegetables.
  • Step #11 Cover up & let simmer 15 mins or until vegetables are tender.
  • Step #12 Stir in raisins.
  • Step #13 Serve with couscous, if desired.
