Pignoli Cookies Recipe

Ingredients
  • 1 c pine nuts .
  • 1/2 c granulated sugar .
  • 3 tbsps all-purpose flour .
  • 2 large size egg whites, no larger .
  • 1 pinch salt .
  • 1/2 tsp vanilla extract .
  • 1 (7 oz) box odense almond paste, grated .
  • 1/2 c powdered sugar, firmly packed

Directions
  • Step #1 1 Preheat oven to 325°F Line a cookie sheet with parchment paper or foil wrap.
  • Step #2 2 Combine grated Almond Paste, granulated & powdered sugars in a bowl.
  • Step #3 Beat on low with electric mixer until texture of small crumbs.
  • Step #4 3 Add egg whites & vanilla.
  • Step #5 Beat on high for 3 mins or until the consistency of a smooth paste.
  • Step #6 4 Add flour & salt.
  • Step #7 Mix until just mixd.
  • Step #8 Cover up & put in the fridge for one hr.
  • Step #9 5 Add pine nuts to a shallow bowl.
  • Step #10 Drop batter one tsp at a time into nuts.
  • Step #11 With slightly dampened fingertips, quickly lift & flip batter “no-nuts” side down onto cookie sheet.
  • Step #12 6 Bake 14-16 mins or until light golden.
  • Step #13 Gently slide parchment paper off of pans onto wire racks.
  • Step #14 When cookies are completely cooled, remove this from parchment.
  • Step #15 Store cookies in airtight containers between wax paper.
