1 tsp almond extract or 2-3 drops bitter almond oil
Directions
Step #1 Preheat the oven to 325F degrees.
Step #2 Break the marzipan in pieces into a medium-sized bowl.
Step #3 Mix in the sugar,salt,flavorings & almond flour; the mixture will be crumbly.
Step #4 Add the egg white, beating until the mixture is smooth.
Step #5 Place the pine nuts in a shallow dish.
Step #6 Using a tsp cookie scoop, or your lightly oiled or wets hands, drop one inch balls of dough into the pine nuts, rolling & pressing carefully to coat them thoroughly.
Step #7 You may also simply grab a handful of pine nuts, & roll the dough between your palms, pressing in pine nuts as you go.
Step #8 Place the cookies on lightly greased or parchment-lined cookie sheets, leaving about one inch between them.
Step #9 Bake the cookies for 22 to 24 mins, or until they're lightly browned.
Step #10 Cool them on the pans for five mins, then transfer to a rack to cool completely.
