Warm Chickpea Salad With Spiced Mushrooms Recipe

Ingredients
  • 14 oz canned chick-peas .
  • 1 red chili, de-seeded & sliced .
  • 8 3/4 oz baby spinach leaves .
  • 1/4 c sliced mint leaves .
  • 2 tsps ground cumin .
  • 10 1/2 oz button mushrooms .
  • 2 garlic cloves, sliced .
  • 6 1/4 fluid oz Greek yogurt .
  • To serve .
  • 3 tbsps olive oil .
  • 1 lemon, juice of .
  • For the dressing

Directions
  • Step #1 Rinse & drain the canned chickpeas Heat two tbsps of the oil in a frying pan.
  • Step #2 Add the mushrooms, season this with salt & cook this until softened.
  • Step #3 Reduce the heat, then add the garlic, chilli & chickpeas.
  • Step #4 Fry for two mins, then add the cumin & half the lemon juice.
  • Step #5 Cook until the juices in the pan evaporate, then set aside.
  • Step #6 For the dressing, put the yoghurt in a bowl, then add the sliced mint & the remaining lemon juice & oil.
  • Step #7 Add salt & pepper & mix until mixed.
  • Step #8 To serve, divide the spinach between four plates or put on a serving platter, add the chickpea & mushroom mixture, then pour the yoghurt dressing over the top & serve.
