Step #1 Rinse & drain the canned chickpeas
Heat two tbsps of the oil in a frying pan.
Step #2 Add the mushrooms, season this with salt & cook this until softened.
Step #3 Reduce the heat, then add the garlic, chilli & chickpeas.
Step #4 Fry for two mins, then add the cumin & half the lemon juice.
Step #5 Cook until the juices in the pan evaporate, then set aside.
Step #6 For the dressing, put the yoghurt in a bowl, then add the sliced mint & the remaining lemon juice & oil.
Step #7 Add salt & pepper & mix until mixed.
Step #8 To serve, divide the spinach between four plates or put on a serving platter, add the chickpea & mushroom mixture, then pour the yoghurt dressing over the top & serve.
