Atomic Girl's Vegetarian Chili Recipe

Ingredients
  • 1/4 c fresh cilantro, sliced .
  • salt & pepper (to taste) .
  • 1 green bell pepper, sliced .
  • 2 (4 1/4 oz) cans green chilies, sliced .
  • 2 tbsps chili powder .
  • 1 tbsp dried chipotle powder .
  • 3 garlic cloves, minced .
  • 1 red bell pepper, sliced .
  • 1 (28 oz) can sliced tomatoes .
  • 1 c tomato sauce .
  • 2 (19 oz) cans mixed beans (or beans of your choice) .
  • 1 (14 oz) can Mexican-style tomatoes .
  • 3/4 c textured vegetable protein, granules .
  • 1 tbsp olive oil .
  • 1/2 c corn kernels (canned or frozen)

Directions
  • Step #1 In a large saucepan or Dutch oven, saute onion, peppers & garlic in olive oil until onion is soft.
  • Step #2 Add remaining ingredients except cilantro.
  • Step #3 Simmer for 40 mins.
  • Step #4 Add cilantro & heat for another 5 mins.
