Step #1
Sift together the whole wheat flour, baking powder & salt, pastry flour, set aside.
Step #2 In a medium bowl, stir this together the vegetable oil, 2 c of peanut butter, honey & yogurt until smooth.
Step #3 Add the dry ingredients & mix by hand until well mixed.
Step #4 Shape into a roll that is 2 inches in diameter, wrap & chill until firm.
Step #5 Preheat oven to 350 degrees F (175 degrees C).
Step #6 Unwrap the roll of dough, & slice into 1/4 inch slices.
Step #7 Place half of the cookies onto unprepared baking sheets.
Step #8 Spread 1/2 tsp of peanut butter onto the center of each cookie on the sheets, cover with the remaining cookie rounds, & seal edges tightly with a fork.
Step #9 Bake for 10 to 12 mins in the preheated oven.
Step #10 Remove cookies from baking sheets to cool on wire racks.
