Double Peanut Butter Cookiesi Recipe

Ingredients
  • 2 c pastry flour
  • 1/2 c peanut butter
  • 2 c peanut butter
  • 1 1/2 c honey
  • 2 1/2 c whole wheat flour
  • 1/2 tsp salt
  • 1 1/2 tsps baking powder
  • 1/2 c vegetable oil
  • 3 tbsps plain yogurt

Directions
  • Step #1 Sift together the whole wheat flour, baking powder & salt, pastry flour, set aside.
  • Step #2 In a medium bowl, stir this together the vegetable oil, 2 c of peanut butter, honey & yogurt until smooth.
  • Step #3 Add the dry ingredients & mix by hand until well mixed.
  • Step #4 Shape into a roll that is 2 inches in diameter, wrap & chill until firm.
  • Step #5 Preheat oven to 350 degrees F (175 degrees C).
  • Step #6 Unwrap the roll of dough, & slice into 1/4 inch slices.
  • Step #7 Place half of the cookies onto unprepared baking sheets.
  • Step #8 Spread 1/2 tsp of peanut butter onto the center of each cookie on the sheets, cover with the remaining cookie rounds, & seal edges tightly with a fork.
  • Step #9 Bake for 10 to 12 mins in the preheated oven.
  • Step #10 Remove cookies from baking sheets to cool on wire racks.
