Tuna Cakes Recipe

Ingredients
  • 1/3 c plain breadcrumbs .
  • 1 large egg, lightly beaten .
  • 1/2 c prepared salsa .
  • 3 (6 oz) cans tuna in olive oil, drained & flaked .
  • 1 tbsp fresh lemon juice .
  • 1 tbsp olive oil .
  • 2 tbsps light mayonnaise .
  • 1/2 c fresh cilantro, coarsely sliced

Directions
  • Step #1 In a medium bowl, egg, mayonnaise, stir this together tuna, cilantro, breadcrumbs, & lemon juice.
  • Step #2 Mix together until ingredients just hold together.
  • Step #3 Scoop out 1/3 c tuna mixture & form into patty.
  • Step #4 Repeat with remaining tuna mixture.
  • Step #5 You should have 8 patties.
  • Step #6 Heat olive oil over med-heat/flame in large skillet.
  • Step #7 Working in batches, cook cakes until golden brown on both sides, about 2 mins per side.
  • Step #8 Serve hot accompanied with salsa.
