Romano Cheese Spinach Bread Recipe

Ingredients
  • 1/2 tsp oregano .
  • 2 c shredded romano cheese, divided .
  • 1 garlic clove, finely sliced .
  • 2 ripe tomatoes, sliced thin .
  • 10 oz frozen sliced spinach, thawed & well drained .
  • 1 red pepper, cored, seeded & sliced into thin strips .
  • 1/2 tsp basil .
  • 3 tbsps olive oil .
  • 1 loaf French bread, split lengthwise .
  • 1 small onion, sliced thin

Directions
  • Step #1 Heat oil in large skillet.
  • Step #2 Saute onion, tomatoes, pepper & garlic for 6-8 mins until tender.
  • Step #3 Add seasonings & remove this from heat.
  • Step #4 While sauteeing, cut bread loaf in half & spread spinach evenly on both sides, sprinkle with 1/2 the cheese.
  • Step #5 Top with vegetable mixture & cover with remaining cheese.
  • Step #6 Broil for 3 mins.
  • Step #7 Cut each half into 8 serving size pieces.
