Fettuccine With Goat Cheese And Peppers Recipe

Ingredients
  • 2 garlic cloves, minced .
  • 1/4 c chicken broth .
  • 10 small kalamata olives .
  • 1/4 c fresh basil, slivered .
  • 4 1/2 oz goat cheese, crumbled .
  • 1 medium red bell pepper .
  • 12 oz fettuccine pasta, cooked & kept warmed .
  • 8 sun-dried tomatoes .
  • 1 tbsp olive oil .
  • 2 tsps dried oregano .
  • 1 medium yellow bell pepper .
  • 1 c scallions, sliced .
  • 1 tbsp capers, drained & rinsed

Directions
  • Step #1 Cut the bell pepper into thin slices & set aside.
  • Step #2 Pit & coarsely chop olives & set aside.
  • Step #3 Place tomatoes in shallow pan & cover with boiling water for 2 mins.
  • Step #4 Drain, reserving 1/4 c of the liquid.
  • Step #5 Thinly slice tomatoes & set aside.
  • Step #6 Heat oil In a large-ish nonstick skillet; add scallions & garlic.
  • Step #7 Stir frequently while cooking for 2 mins.
  • Step #8 Add peppers, & cook for 3 mins or until just tender.
  • Step #9 Add chicken broth & cook this until most of the liquid has evaporated.
  • Step #10 Reduce heat, olives, then add tomatoes & the reserved liquid, basil, capers & oregano.
  • Step #11 Simmer for 5 mins.
  • Step #12 Put fettuccine In a large-ish serving bowl; add goat cheese & toss until melted.
  • Step #13 Add pepper mixture & toss until mixed well.
