Nut Flavoured Vegetable Curry Recipe

Ingredients
  • 225 g tomatoes, sliced roughly .
  • 2 tbsps ground coriander .
  • crushed peanuts, to garnish .
  • 1/2 tsp chili powder .
  • 500 g mixed vegetables (your choice) .
  • 2 medium potatoes, cubed & par boiled .
  • toasted sliced almonds, to garnish .
  • mixed grain rice, to serve .
  • 2 garlic cloves, peeled & crushed .
  • 1 tsp ground cumin .
  • 150 ml natural yoghurt .
  • 1/2 tsp ground turmeric .
  • 150 ml water .
  • 30 ml vegetable oil .
  • 2 tsps table salt

Directions
  • Step #1 Heat oil in large pan.
  • Step #2 Add herbs, spices & garlic.
  • Step #3 Fry 2-3 mins stirring continuously.
  • Step #4 Add mixed vegetables potatoes & salt.
  • Step #5 Stir well to coat in spices.
  • Step #6 Stir in tomatoes & water.
  • Step #7 , bring to the boil.
  • Step #8 Cover up & carefully simmer for 25 -30 mins, or until veggies are tender.
  • Step #9 Remove pan from heat.
  • Step #10 Stir in yoghurt & adjust seasoning if necessary.
  • Step #11 Serve with rice & garnish with peanuts & almonds.
  • Step #12 Serves 2.
  • Step #13 Add a pinch of salt when cooking rice.
  • Step #14 This brings out the delicious nutty flavor.
