Crab Stuffed Avocado Recipe

Ingredients
  • paprika .
  • kosher salt .
  • 2 large Hass avocadoes .
  • 1 c mascarpone cheese (or 1 c cream cheese thinned with 4 tsps cream) .
  • 3 drops onion juice .
  • 1 tbsp sliced green peppers .
  • 4 tbsps mayonnaise .
  • 2 tsps capers .
  • 1/4 c sliced celery .
  • 1 eureka lemon, wedged into quarters .
  • 1 tsp nutmeg .
  • 2 tomatoes, cut into wedges .
  • 1 1/2 c fresh cooked dungeness crabmeat

Directions
  • Step #1 Wash the avocados in cold water.
  • Step #2 Cut the avocados in half lengthwise.
  • Step #3 Remove the seed & leave the skin on.
  • Step #4 Place the avocado on a bed of Romaine leaves with a wedge of lemon & sliced tomatoes.
  • Step #5 Mix the crab meat, celery, onion juice Mascarpone cheese & mayonnaise together; add nutmeg, green pepper, salt & paprika.
  • Step #6 Heap this on the avocado half & decorate with the capers.
