Beef Tenderloin Roast With Mushroom Sauce Recipe

Ingredients
  • 3 tbsps butter .
  • 1 tbsp onions, minced .
  • 1 (3 lb) beef tenderloin .
  • 1/2 tsp dried tarragon .
  • 1 tsp parsley, sliced .
  • 2 c mushrooms, sliced .
  • 1 c beef broth .
  • 1 tbsp lemon juice .
  • 2 tbsps Burgundy wine .
  • 2 tbsps all-purpose flour

Directions
  • Step #1 Preheat oven to 450 Degrees F.
  • Step #2 Pat the meat dry & place it on a rack in a baking pan.
  • Step #3 Roast for 35 mins or until the meat registers 125 degrees F.
  • Step #4 to 130 degrees F.
  • Step #5 on an instant read thermometer.
  • Step #6 Cook longer if less rare meat is desired.
  • Step #7 Saute the onion in butter in a small skillet.
  • Step #8 Add the mushrooms & cook 5 mins or until browned.
  • Step #9 Stir in the flour.
  • Step #10 Add the remaining ingredients; mix well.
  • Step #11 Cook over med-heat/flame, stirring until thickened.
  • Step #12 Serve the sauce with the beef.
