Mexican Courgette Bake Recipe

Ingredients
  • 2 eggs .
  • 2 tbsps milk .
  • 175 g feta cheese, rinsed & crumbled .
  • 275 g frozen sweetcorn, thawed .
  • 2 garlic cloves, crushed .
  • 6 large courgettes .
  • 25 g melted butter

Directions
  • Step #1 Halve the courgettes & scoop out the seeds.
  • Step #2 Sprinkle top the shells with salt & turn upside down.
  • Step #3 Leave to stand for 1 hr.
  • Step #4 wipe out the salt from the courgettes & place this in an ovenproof dish.
  • Step #5 Heat oven to 180C.
  • Step #6 Place the sweetcorn, garlic, eggs milk & pepper in a mixer & process to a rough paste.
  • Step #7 mix in 2/3 of the feta & divide the mixture between the courgette shells.
  • Step #8 Scatter over the rest of the cheese & drizzle with the butter.
  • Step #9 bake for 40 mins, if they begin to brown too quickly cover with foil wrap.
