Super Spicy Stuffed Sausage Shells Recipe

Ingredients
  • 1 lb hot Italian sausage, sliced finely .
  • 1 (15 oz) ricotta cheese .
  • 1 1/2 c mozzarella cheese, shredded & divided .
  • 2 garlic cloves, minced .
  • 2 tbsps olive oil .
  • 1 small onion, sliced .
  • 1 egg .
  • 2 tbsps flat-leaf Italian parsley, sliced .
  • 1 c parmesan cheese, grated & divided .
  • 1 (26 oz) jar marinara sauce, any flavor you like .
  • 1/4 tsp nutmeg .
  • 8 oz shell macaroni, cooked according to package instructions .
  • salt & pepper

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Cook pasta according to package instructions.
  • Step #3 While pasta is cooking, cook sliced sausage until browned & cooked thoroughly inside.
  • Step #4 In a large mixing bowl, mix all remaining ingredients except marinara sauce(reserve 1/2 c mozzarella cheese & 1/2 c parmesan cheese).
  • Step #5 Add salt & pepper to taste.
  • Step #6 Add cooked sausage to mixture.
  • Step #7 Drain pasta when it is al dente.
  • Step #8 Pour about 1/2 c of the marinara sauce in the bottom of a 9x12 baking pan.
  • Step #9 Pick up one shell at a time & carefully stuff 1-2 tablspoons of the mixture into the shell.
  • Step #10 Place the stuffed shells next to one another inside the baking dish.
  • Step #11 Pour the remaining marinara sauce all over the tops of the stuffed shells.
  • Step #12 Cover up dish with foil wrap & bake approximately 40 mins or until the sauce is bubbling.
  • Step #13 In the remaining 5 mins, sprinkle remaining 1/2 c mozzarella cheese & 1/2 parmesan cheese on top.
