Cayenne Saffron Scallops Recipe

Ingredients
  • 1 lb scallops (or just over) .
  • 6 oz butter .
  • 1/3 c cream .
  • 8 saffron threads .
  • 1/4 c dry white wine .
  • 1 zucchini .
  • 2 tsps olive oil .
  • 1/4 c fish stock .
  • 1 large carrot .
  • 1 garlic clove, crushed .
  • 1 small onion, sliced .
  • 1 c spinach, shredded in strips .
  • 1/2 tsp cayenne pepper .
  • Saffron Sauce

Directions
  • Step #1 Cut carrot & zuchini into thin strips/matchsticks.
  • Step #2 Add carrot to a pan of boiling water, & let simmer until tender.
  • Step #3 Add the zuchini & let simmer for 1 min, add spinach & drain as soon as possible.
  • Step #4 Heat the oil in a frying pan, add scallops in batches & cook about 3 mins or until tender.
  • Step #5 Saffron Sauce:.
  • Step #6 Heat 1 oz of the butter in a frying pan, cayenne & saffron, add the onion, garlic, & cook this until the onion is soft.
  • Step #7 Add the wine & stock & let simmer until reduced by half.
  • Step #8 Add the cream & stir.
  • Step #9 Add the remaining butter, a few bits at a time, stirring, until well mixd.
  • Step #10 Arrange the veggies on 4 plates & top this with scallops.
  • Step #11 Pour the sauce over each plate.
