Pasta With Pumpkin & Pesto Recipe

Ingredients
  • 1-2 tbsp cornflour .
  • 375 g pasta .
  • 2 c pumpkin, cubed .
  • 1 tbsp oil .
  • 2 slices bacon, sliced .
  • parmesan cheese (to garnish) (optional) .
  • salt & pepper .
  • 150 g pesto sauce .
  • 375 ml evaporated milk .
  • 1 onion, sliced .
  • toasted pine nuts (to garnish) (optional)

Directions
  • Step #1 Cook pasta according to pkt directions.
  • Step #2 Whilst pasta is cooking, heat oil in a separate pan, add onion, bacon & pumpkin & cook for 2 mins.
  • Step #3 Add pesto sauce & mixd evaporated milk & cornflour.
  • Step #4 Bring to the boil stirring, simmer uncovered for approx 10 mins If sauce thickens too much just add a little milk to bring it back to desired consistency.
  • Step #5 Add salt & pepper to taste.
  • Step #6 Stir drained pasta through sauce & serve garnished with toasted pine nuts & Parmesan cheese.
