Corn Nuggets Recipe

Ingredients
  • salt & pepper to taste
  • 1 egg white
  • 1 (11 oz) can creamed corn
  • 1/2 c yellow cornmeal
  • 1/2 c all-purpose flour
  • 3 c vegetable oil for deep frying
  • 2 tbsps milk
  • 1 (11 oz) can whole kernel corn, with liquid

Directions
  • Step #1 In a medium bowl, stir this together the creamed corn & drained whole kernel corn.
  • Step #2 Line a baking sheet with aluminum foil, & coat with vegetable oil or cooking spray.
  • Step #3 Drop spoonfuls of the corn mixture onto the sheet, & freeze until firm, about 3 hrs.
  • Step #4 Heat one inch of oil to 350 degrees F (175 degrees C) in a large deep skillet, or fill a deep-fryer with oil as directed by the manufacturer.
  • Step #5 Mix together the cornmeal, milk, egg white, flour, salt & pepper in a medium bowl.
  • Step #6 Dip frozen corn nuggets in the batter, & quickly fry in hot oil until golden brown.
  • Step #7 Remove to paper towels to drain.
