Step #1 Heat 6 tbsps butter in a heavy skillet over med-heat/flame.
Step #2 Beat the egg with a fork in a bowl until smooth.
Step #3 You don't want them frothy, & you don't want globs of white left either.
Step #4 Beat in the water.
Step #5 When the butter has melted, pour in the eggs.
Step #6 Spice up with salt & pepper & stir.
Step #7 Let the eggs start to set a bit, then stir with a big wooden spatula, making sure you scrape the bottom of the skillet.
Step #8 Keep on cooking, stirring & scraping the bottom of the skillet frequently, until the eggs are almost set but still runny.
Step #9 Cut the remaining 2 tbsps butter into bits & stir it in.
Step #10 The eggs should still be slightly undercooked.
Step #11 Turn off the heat.
Step #12 Scrape the eggs onto a platter or onto breakfast plates & serve right away.
Step #13 The eggs will finish cooking & be beautifully creamy by the time you get them to the table.
Step #14 Scrambled eggs are like pasta--they are not meant to wait.
