Proper Scrambled Eggs Recipe

Ingredients
  • coarse salt & freshly ground black pepper .
  • 2 tbsps water .
  • 8 tbsps unsalted butter .
  • 8 large eggs

Directions
  • Step #1 Heat 6 tbsps butter in a heavy skillet over med-heat/flame.
  • Step #2 Beat the egg with a fork in a bowl until smooth.
  • Step #3 You don't want them frothy, & you don't want globs of white left either.
  • Step #4 Beat in the water.
  • Step #5 When the butter has melted, pour in the eggs.
  • Step #6 Spice up with salt & pepper & stir.
  • Step #7 Let the eggs start to set a bit, then stir with a big wooden spatula, making sure you scrape the bottom of the skillet.
  • Step #8 Keep on cooking, stirring & scraping the bottom of the skillet frequently, until the eggs are almost set but still runny.
  • Step #9 Cut the remaining 2 tbsps butter into bits & stir it in.
  • Step #10 The eggs should still be slightly undercooked.
  • Step #11 Turn off the heat.
  • Step #12 Scrape the eggs onto a platter or onto breakfast plates & serve right away.
  • Step #13 The eggs will finish cooking & be beautifully creamy by the time you get them to the table.
  • Step #14 Scrambled eggs are like pasta--they are not meant to wait.
