Heart Healthy Shrimp Gumbo With Cajun Spice Mix Recipe

Ingredients
  • 3 c hot cooked long-grain rice or brown rice .
  • 2 (14 oz) cans low sodium beef broth .
  • bottled hot pepper sauce (optional) .
  • 1/4 tsp salt .
  • 1 (16 oz) package frozen cut okra .
  • 1/4 tsp crushed red pepper flakes .
  • 1/4 tsp ground black pepper .
  • 2 c sliced onions .
  • 1 lb large shrimp, in shells (fresh or frozen) .
  • 1 1/2 c sliced green peppers (and or red sweet pepper) .
  • 1 c water .
  • 1/3 c all-purpose flour .
  • 1 recipe cajun seasoning .
  • 4 stalks celery, thinly sliced .
  • green onions (optional) .
  • 1/2 tsp dried thyme, crushed .
  • 1/4 tsp white pepper .
  • 2 tbsps cooking oil .
  • 4 garlic cloves, minced

Directions
  • Step #1 Thaw shrimp, if frozen.
  • Step #2 Peel & devein shrimp, leaving tails intact if desired.
  • Step #3 Rinse shrimp; pat dry with paper towels.
  • Step #4 In a medium skillet, cook flour over med-heat/flame about 6 mins or until brown, stirring often.
  • Step #5 Transfer to a medium bowl; set aside.
  • Step #6 In a 4-quart Dutch oven, heat oil over med-heat/flame.
  • Step #7 Add onion, celery, sweet pepper, & garlic; cook & stir about 5 mins or until tender.
  • Step #8 Slowly whisk broth into browned flour.
  • Step #9 Add broth mixture, water, & Cajun Spice Mix to Dutch oven.
  • Step #10 Stir in okra.
  • Step #11 Bring to boiling; reduce heat.
  • Step #12 Cover up & let simmer for 15 mins.
  • Step #13 Add shrimp; cook for 2 to 3 mins or until shrimp is pink.
  • Step #14 To Serve:.
  • Step #15 spoon gumbo into 8 bowls.
  • Step #16 Top each serving with rice, a shrimp, & a green onion, if desired.
  • Step #17 If desired, pass hot pepper sauce.
  • Step #18 Makes 8 (1-1/4 c gumbo plus 1/3 c rice) servings.
  • Step #19 Cajun Spice Mix: In a small bowl, mix 1/2 tsp dried thyme, crushed; 1/4 tsp ground white pepper; 1/4 tsp salt; 1/4 tsp ground black pepper; & 1/4 tsp crushed red pepper.
