Ingredients
1 1/2 c all-purpose flour .
1/4 tsp baking soda .
2 eggs .
1/2 c sliced pecans or walnuts .
1/2 c dried tart cherries or raisins .
1/4 c brandy or orange juice (1/4 to 1/3 c) .
2 tbsps light corn syrup .
3/4 c packed brown sugar .
3/4 c snipped dried apricots .
1/2 tsp baking powder .
1 tsp vanilla .
orange peel, curls (optional) .
1/2 c pitted dates, sliced .
1/2 c orange juice or apple juice .
1/4 c butter .
pearl sugar (optional) .
1 tsp finely shredded orange peel
Directions
Step #1 Grease & lightly flour an 8-inch fluted tube mold or, grease an 8x4x2-inch loaf pan; line pan with parchment paper, grease paper & set aside.
Step #2 Combine flour, baking powder, & baking soda; set aside.
Step #3 In a bowl beat butter with an electric mixer on medium speed for 30 seconds.
Step #4 Add the brown sugar; beat until mixture is mixd.
Step #5 Add eggs, 1 at a time, beating on medium speed until mixd (batter may appear curdled).
Step #6 Combine orange peel, corn syrup, juice, & vanilla.
Step #7 Add flour mixture & juice mixture alternately to butter mixture, beating on lowish speed after each addition just until mixd.
Step #8 Combine fruits & nuts & fold into batter, spread into prepared pan.
Step #9 Bake in a 300F degree F oven about 1 hr in tube pan, about 1-1/2 hrs in loaf pan, or until a wooden toothpick comes out clean.
Step #10 If necessary, cover cake with foil wrap the last 15 to 30 mins to prevent overbrowning.
Step #11 Cool cake in tube pan on wire rack 10 mins.
Step #12 Remove from pan & cool thoroughly on rack.
Step #13 Or, thoroughly cool the cake in loaf pan on wire rack; remove this from pan.
Step #14 Wrap cake in brandy- or juice- moistened 100-percent cotton cheesecloth.
Step #15 Wrap in foil wrap.
Step #16 Store in refrigerator 2 to 8 weeks; remoisten cheesecloth about once a week or as needed.
Step #17 If desired, sprinkle with pearl sugar & garnish with orange-peel curls before slicing.
