Chicken And Onion Curry (murgh Do Pyaja) Recipe

Ingredients
  • 2-3 large garlic cloves, crushed .
  • 2-3 tbsps cooking oil .
  • 500 g chicken pieces .
  • 500 g onions, peeled & thinly sliced .
  • 1/2 tsp chili powder (to taste) .
  • 2 tsps salt .
  • 2 tsps ground coriander .
  • 4-5 green cardamoms, crushed or 1 tsp ground cardamom .
  • 5-6 tbsps thick whole milk Greek yogurt (Greek is great!) .
  • 1/2 tsp garam masala

Directions
  • Step #1 Heat oil in a pan.
  • Step #2 Fry onions & garlic until golden brown.
  • Step #3 Add chicken & fry on high heat, until it is nicely brown all over.
  • Step #4 Mix all spices & salt in yogurt & add this mix to the chicken.
  • Step #5 Cook until chicken is tender.
  • Step #6 You cook it in pressure cooker in 10 mins.
  • Step #7 Garnish with coriander leaves & serve this with Nan or Tandoori Roti or Chapatti.
  • Step #8 NOTES: *** You can add 2 tbs.
  • Step #9 dry methi (fenugreek) leaves, also known as kasoori methi, while you are frying onions.
  • Step #10 It gives the dish a different flavor.
  • Step #11 *** Tips for cooking with yogurt: Always use full fat yogurt, if possible.
  • Step #12 Skimmed milk yogurt sometimes curdles during cooking.
  • Step #13 If you wish to use low fat yogurt, add 1 heaped tsp of plain or corn flour per c of yogurt.
  • Step #14 *** Make sure that the dish you are cooking is at about room temp.
  • Step #15 If yogurt is cooked straight from the fridge, it may curdle.
  • Step #16 *** When adding yogurt during cooking, take out a few tbsps of the hot food in a bowl, mix yogurt, warming it a bit & then stir it back into the hot dish.
  • Step #17 *** Substitute sour cream for yogurt, using only half the amount.
