Beef Tenderloin With Gorgonzola Sauce Recipe

Ingredients
  • 2 tsps garlic powder .
  • 1/2 c apple cider vinegar .
  • 1/2 tsp salt .
  • FOR THE GORGONZOLA SAUCE .
  • 1/2 tsp pepper .
  • 3 tbsps coarse grained Dijon mustard .
  • 1/2 c unsalted butter, melted .
  • 2 tsps onion powder .
  • 2 oz crumbly gorgonzola, sliced (NOT "dolce") .
  • FOR THE BEEF .
  • 2 tbsps parmesan cheese .
  • 2 c heavy cream .
  • 2 tbsps fresh parsley, minced .
  • 2 tbsps sea salt .
  • 6 tbsps worcestershire sauce .
  • 2 tbsps black pepper .
  • 1 (6 lb) beef tenderloin, trimmed of fat

Directions
  • Step #1 Use paper towels to thoroughly wipe down the tenderloin with the cider vinegar.
  • Step #2 Combine the salt, onion powder, garlic powder, pepper, Worcestershire sauce & mustard.
  • Step #3 Spread this spice paste over the tenderloin, coating the whole exterior.
  • Step #4 Place on a broiler pan & drizzle half of the melted butter over the tenderloin.
  • Step #5 Broil for 5 mins.
  • Step #6 Turn tenderloin over to other side & drizzle with the remaining butter.
  • Step #7 Broil for another 5 mins.
  • Step #8 NOTE - BEGIN MAKING SAUCE NOW, SEE INSTRUCTIONS BELOW.
  • Step #9 Set the oven to 350 degrees & bake the tenderloin at this temperature for 45 mins.
  • Step #10 Remove from the oven & let sit for 10 mins before slicing.
  • Step #11 Serve with Gorgonzola Sauce.
  • Step #12 GORGONZOLA SAUCE:.
  • Step #13 Bring the cream to a full boil in a medium saucepan over medium-high heat, then continue to simmer rapidly for 35 to 40 mins, until it's thickened like a white sauce, stirring every once in awhile.
  • Step #14 Remove the pan from the heat & add the gorgonzola, parmesan, salt pepper.
  • Step #15 Whisk rapidly until the cheeses melt, add parsley, & serve.
