Italian Biscotti Recipe

Ingredients
  • 1 tsp baking soda .
  • 2 c flour .
  • 1 tsp almond extract .
  • 2 eggs .
  • 2 egg whites .
  • 1/2 tsp anise extract (optional) .
  • 3/4-1 c whole almonds .
  • 1/4 tsp salt .
  • 1 c sugar

Directions
  • Step #1 In a large mixer bowl mix the eggs, egg whites, vanilla, & anise; mix until well-mixd.
  • Step #2 Add the sugar, flour, soda, & salt; beat until a dough forms.
  • Step #3 Add the nuts.
  • Step #4 Turn the sticky dough onto a lightly floured board; knead several times.
  • Step #5 Divide the dough in half.
  • Step #6 With floured hands, form the dough into two flattish logs, about 15" long by 2" wide.
  • Step #7 Place the logs about 3" apart on a baking sheet that has been sprayed lighted with cooking spray.
  • Step #8 Bake at 325F degrees for 40 mins.
  • Step #9 Remove & cool for 10 mins.
  • Step #10 Reduce oven to 275 degrees.
  • Step #11 On a cutting board, cut the logs diagonally into 3/4" thick slices.
  • Step #12 Arrange the slices on the baking sheet & bake for 10-12 mins; turn & bake another 10-12 mins.
  • Step #13 Turn heat off & leave biscotti to crisp in the oven for another 15 mins.
  • Step #14 Remove & cool completely.
