Decadent Cream Cheese Coconut Pie Recipe

Ingredients
  • 1 keebler graham cracker crust (can use the shortbread one if you prefer) .
  • Step 4 .
  • 3/4 c half-and-half cream .

  • 1 c Cool Whip .
  • 1/3 c shredded coconut .
  • 1/2 c powdered sugar .
  • 3-5 drops coconut extract .
  • 3-5 drops coconut extract .
  • Step 1 .
  • 2-3 drops coconut extract .
  • 1 (3 1/2 oz) box jello instant coconut cream pudding mix .
  • 1 c 2% low-fat milk .
  • 1 (8 oz) container extra Cool Whip .
  • Step 2 .
  • 4 oz cream cheese (softened)

Directions
  • Step #1 Step 1 - Place powdered sugar, cool whip, cream cheese & extract in mixing bowl & beat until smooth & creamy.
  • Step #2 Spread in pie shell, covering sides as well as the bottom.
  • Step #3 Step 2 - Beat until well mixed & then pour on top of cream cheese layer.
  • Step #4 Sit aside to firm up.
  • Step #5 Step 3 - Spread coconut on cookie sheet & toast lightly in oven (watch carefully & stir if necessary) – let cool.
  • Step #6 Step 4 - Mix extract into cool whip.
  • Step #7 Layer over pie filling.
  • Step #8 Add toasted coconut to top.
  • Step #9 Refrigerate & enjoy a most decadent dessert.
