Grandma's Buttermilk Spice Cake Recipe

Ingredients
  • 1 c Crisco .
  • 1/3 c . buttermilk .
  • 1 pinch ground cloves .
  • 1 tsp baking soda .
  • 2 c sugar .
  • 1 c milk .
  • 1/2 tsp salt .
  • 3 c flour .
  • 1 tsp nutmeg .
  • icing .
  • 1 (3 1/2 oz) box vanilla instant pudding mix .
  • 1 tsp cinnamon .
  • 2 1/2 tsps baking powder .
  • 1 c sugar .
  • 1 c shortening .
  • 4 eggs .
  • 2 tsps vanilla .
  • 1 1/2 c buttermilk

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Grease & lightly flour two 9" round cake pans.
  • Step #3 In a large bowl, cream together shortening, sugar & eggs.
  • Step #4 In a separate bowl, baking powder, sift together flour, salt, nutmeg & cinnamon.
  • Step #5 Add to creamed sugar mixture.
  • Step #6 Beat together & while mixing, add 1 1/2 c buttermilk & the vanilla.
  • Step #7 Beat on medium until well mixed.
  • Step #8 In a small, separate bowl, mix 1/3 c buttermilk with 1 tsps baking soda.
  • Step #9 With a spatula, carefully fold the baking soda & buttermilk mixture to batter.
  • Step #10 Divide the batter into the two 9" round pans & bake this at 350 F for 30 mins or until toothpick comes out clean.
  • Step #11 Let cakes cool.
  • Step #12 Meanwhile, prepare icing by mixing all ingredients In a large-ish mixing bowl.
  • Step #13 Whip hard for 5-10 mins.
  • Step #14 Place one cake on a cake plate.
  • Step #15 Put approximately 1/3 frosting on top of the cake.
  • Step #16 Top with the second cake.
  • Step #17 Frost the top of the second cake & the sides of both cakes.
