Low Fat Dark Chocolate Mousse Recipe

Ingredients
  • 1 (16 oz) package silken tofu, drained .
  • 1/4 c unsweetened cocoa powder (preferably Dutch-processed) .
  • 6 oz high quality bittersweet chocolate, finely sliced .
  • 1 1/4 tsps chocolate shavings .
  • 1/2 c water .
  • 1/4 c heavy cream .
  • 1/2 c sugar .
  • 1/2 tsp sugar .
  • 1 tbsp espresso or strong coffee .
  • 1 tbsp brandy (optional)

Directions
  • Step #1 In a food processor/blender or mixer puree the tofu until it is smooth.
  • Step #2 Put the sliced chocolate, cocoa powder, water & brandy in the top of a double boiler or a heat-proof bowl.
  • Step #3 Place over a pot containing 1-inch of barely simmering water.
  • Step #4 Stir frequently, until melted & smooth.
  • Step #5 Remove from heat.
  • Step #6 Mix in 1/2 c of sugar, a little at a time, until smooth.
  • Step #7 Add the chocolate mixture to the tofu & puree until well mixed.
  • Step #8 Spoon the mousse into individual serving dishes or one large serving dish.
  • Step #9 Cover up & put in the fridge for at least 1 hr.
  • Step #10 Whip the cream with an electric mixer.
  • Step #11 When the cream is almost completely whipped, add the remaining 1/2 tsp of sugar & finish whipping.
  • Step #12 Top each serving with a dollop of whipped cream & a sprinkle of chocolate shavings & serve.
