Souped Up Lentils Recipe

Ingredients
  • 4 c chicken stock or vegetable stock .
  • 1/4 tsp turmeric .
  • 1/2 medium white onion, minced .
  • 4 tbsps sour cream .
  • 1 c water .
  • 1 medium carrot, peeled & grated (or sliced finely) .
  • 1 c red lentils, picked over & rinsed .
  • 4 tbsps cilantro (optional) or parsley, sliced finely (optional) .
  • 1 medium white potato, peeled & grated (or sliced finely) .
  • 1/4-1 tsp salt (depends on your taste & the saltiness of the stock, add 1/4 tsp at a time) .
  • 1/4-1/2 tsp black pepper, coarsely ground (depends on your taste) .
  • 1 oz thin rice noodles, broken into pieces (vermicelli) .
  • 1 garlic clove, crushed

Directions
  • Step #1 Put all but the last three ingredients In a large-ish saucepan, stir well & bring to a boil.
  • Step #2 After 3-4 mins on the boil, lower heat to a fast simmer.
  • Step #3 Cook for 20-25 mins, stirring every once in awhile.
  • Step #4 Spoon off & discard any scum on the surface.
  • Step #5 Add the vermicelli & cook for a further 10 mins.
  • Step #6 Stir frequently.
  • Step #7 If you like, you can buzz this up in the food processor/blender, but it's really not necessary.
  • Step #8 Ladle into bowls & top this with sour cream, cilantro (if desired) & more black pepper (if desired).
