Step #1 Melt the butter In a large-ish saucepan over medium low heat.
Step #2 When melted, sprinkle the flour over.
Step #3 Whisk continuously for 2-3 mins, making a roux the consistency of paste.
Step #4 If necessary, add a bit more flour to get the right texture.
Step #5 Slowly add the milk to the roux, stirring constantly.
Step #6 Do not increase the heat at this point.
Step #7 Make sure the milk is thoroughly mixd with the roux.
Step #8 Once mixd, raise the heat a bit & bring slowly to a boil.
Step #9 Let boil about 30 seconds, then remove the pan completely from the heat.
Step #10 Add the 200 grams of grated cheese & stir until melted.
Step #11 USES -- Pour over the dish you are making, such as cauliflower or pour this into a serving bowl (as for dipping, etc.
Step #12 ) Can also be used for potatoes au gratin.
Step #13 If using on a veggie, sprinkle the optional 50 grams of cheese over the top & place under the grill/broiler for 3-4 mins or until golden brown.
