Lemon-polenta Thins Recipe

Ingredients
  • 3 tbsps fresh lemon juice .
  • 1/2 c sugar .
  • 4 tsps raw brown sugar .
  • 1/2 tsp salt .
  • 4 tsps pine nuts, sliced .
  • 1 tbsp lemon zest .
  • 3/4 c yellow cornmeal .
  • 1 1/4 c quick-cooking oats .
  • 1 1/2 tsps lemon zest .
  • 1/2 c coconut oil

Directions
  • Step #1 Preheat oven to 350°C Line a baking sheet with parchment or a silicone mat.
  • Step #2 In a medium mixing bowl, mix oil, sugar, & zest (food processor/blender works great for this).
  • Step #3 Beat in lemon juice, then cornmeal, flour, & salt.
  • Step #4 If your dough is droopy chill it for at least 30 mins.
  • Step #5 In a small bowl stir this together topping ingredients.
  • Step #6 Set aside.
  • Step #7 Drop dough by rounded tspfuls, at least 3 inches apart, onto prepared sheet.
  • Step #8 Using a small pointy spoon push a slight dimple into each dough circle & tip about 1/8 tsp topping into each depression.
  • Step #9 Bake about 12 mins, until cookies are thin disks with golden edges.
