Ricotta/spinach Tortelloni With Gorgonzola Sauce & Pine Nuts Recipe

Ingredients
  • 1/4 c pine nuts (we used toasted slivered almonds) .
  • 1/8 tsp fresh ground black pepper .
  • 1 pinch red pepper flakes .
  • 1 small onion, sliced .
  • 1 (8 oz) package spinach & ricotta tortellini (we used Barilla) .
  • 1/4 c heavy whipping cream .
  • 2 tbsps dry white wine .
  • 1/2 tsp salt .
  • 2 tbsps fresh chives, cut into 1-inch strips .
  • 2 garlic cloves, sliced .
  • 1/2 c gorgonzola, crumbled .
  • 2 tbsps extra-virgin olive oil

Directions
  • Step #1 Roast pine nuts or slivered almonds in pan until very lightly browned.
  • Step #2 Set aside.
  • Step #3 Heat olive oil In a large-ish skillet.
  • Step #4 Add onion, garlic, & red pepper flakes(if using) & saute until transparent.
  • Step #5 Add white wine & whipping cream & let simmer for 3-4 mins.
  • Step #6 Add Gorgonzola cheese & continue to simmer for 3 mins.
  • Step #7 Cook Tortelloni according to package directions.
  • Step #8 Add roasted pine nuts, salt, pepper & drained Tortelloni to skillet.
  • Step #9 Turn off heat, cover & let sit for 2 mins.
  • Step #10 Garnish with chives.
  • Step #11 Serve as soon as possible.
